dc.description.abstractA alimentação é uma necessidade biológica para a sobrevivência do seres vivos. No entanto, valores culturais e simbólicos são incorporados à alimentação dos humanos determinando seu comportamento alimentar, o qual é originado por aspectos demográficos, econômicos, sociais, culturais, ambientais, psicológicos e nutricionais de um indivíduo ou sociedade. O estilo de vida e alimentar se alterou em função de fatores agregados à vida moderna, tais como o tempo, trabalho e praticidade, custo e diversidade, resultando numa estruturação alimentar influenciada por componentes como a mídia, ambiente escolar e familiar, aculturação e tendências tecnológicas, e por isso o comportamento alimentar não se explica somente pelas práticas alimentares com relação direta ao alimento, tais como escolha, quantidade ou preparo. O primeiro componente na formação dessa conduta é a amamentação, a qual reflete um processo de socialização e vínculo da mãe com a criança, instalando o início do aprendizado. A boca será neste momento seu veículo de experienciação de mundo, enquanto aprende. Alguns pesquisadores da área de conhecimento e evolução humana explicam, através de teorias, a formação do comportamento, as quais também embasam a respeito da conduta alimentar, podendo afirmar que o ambiente influencia nessa formação, assim como outros fatores mencionados e de modo geral, o estilo de vida. A socialização proporcionada pela família e escola, será o próximo componente e embasa acreditar que a modelação é uma das formas de construir o comportamento humano e alimentar. O indivíduo utiliza do processo cognitivo, que envolve percepção, linguagem, memória, atenção, sensações, e pensamento, para aprender e moldar sua conduta, e com as experiências vai agregando ao seu comportamento fatores observados. Por isso, fala-se tanto que o comportamento alimentar dos pais pode modelar o estilo alimentar dos filhos, assim como para outros âmbitos. Outra teoria que fundamenta a formação do comportamento se refere ao reforço que damos às atitudes. Sinteticamente, quando estimulamos uma conduta permitimos que ela aconteça e a probabilidade dela ocorrer novamente também aumenta, por exemplo na situação da criança exigindo dos pais um doce não permitido, até que ele é concedido. Novos campos de avanço em pesquisa têm procurado associar as teorias que melhor respaldam a respeito do comportamento humano, e conseguintemente alimentar, e já alcançam achados que confirmam teorias quanto à influência do ambiente, através de mecanismos neuroquímicos. A ação dos órgãos de sentido agindo principalmente por intermédio do hipotálamo pode afetar o equilíbrio corporal e o comportamento, utilizando-se de estímulos e reflexos, atuação de hormônios, apontando o sistema sensorial como forte determinante. Metodologia: Trata-se de uma revisão narrativa da literatura, com busca de artigos publicados em periódicos da área da saúde que abordam o tema em questão, disponíveis nas bases de dados eletrônicas Scielo, Bireme, Biblioteca Virtual em Saúde – Psicologia e Periódicos eletrônicos em Psicologia, PubMed e Lilacs, no período de 2000 a 2014 essencialmente, além de livros publicados na área de conhecimento das Ciências Sociais. A revisão narrativa permite olhar para os fenômenos do ponto de vista histórico-conceitual, para entendê-los a partir das realidades vivenciadas e do conhecimento cientifico acumulado.pt_BR
dc.description.abstractFeeding is a biological need in order to living beings to survive. However, cultural and symbolic values are incorporated into human feeding, determining our feeding behavior, which is originated by demographic, economic, social, cultural, environmental, psychological and nutritional values of an individual or society. Feeding and life styles have been altered because of modern life factors, such as time, work and practicality, cost and diversity, resulting in a feeding structure influenced by components such as media, educational and family environment, culture and technological trends, and because of that, feeding behavior is not explained by eating practices with a direct relation to food, such as choice, quantity or preparation. The first component in the structure of this practice is breastfeeding, which reflects a process of socialization and bonding of mother with the child, marking the start of learning. The mouth will be, in this moment, the child’s way to experiment the worlds, while they child learn. Some researchers in the area of human knowledge and evolution explain, through theories, the construction of behavior, which is also connected to the idea of feeding behavior, making it possible to declare that the environment influences that construction, as also do the other mentioned factor and, in a general way, the life style. The socialization promoted by family and school will be the next component and leads to believe that modeling is one of the ways to structure human feeding behavior. The individual uses the cognitive process, which involves perception, language, memory, attention, sensation, and thought, to learn and model their behavior, and with additional experience contributes to said behavior. That's why it is said that the parents eating habits can influence and model the children's eating habits, as it does in other circumstances. Another theory that forms the base of the study of behavior refers to the reinforcement we give to certain acts. Briefly explaining, when we encourage a behavior, we allow it to happen. For instance, when a child demands sweets to their parents until the child receives them. New developments in research have been seeking to relate the theories that better explain human behavior, and by consequence, feeding behavior. There are findings which confirm the influence of the environment, through neurochemical mechanisms. The action of meaning centers acting primarily through the hypothalamus can affect body balance and behavior, using stimuli and reflexes, the use of hormones, leading to the belief that the sensorial system is an important and determining source. Methodology: the present work is a narrative bibliographical revision, with search for articles published in journals in the field of Health that deal with the subject in question, available through databases such as Scielo, Bireme, Biblioteca Virtual em Saúde - Psychology and electronic journals in Psychology, PubMed and Lilacs, during the period between 2000 and 2014 essentially, as well as published books in the Social Sciences area. The narrative revision allows us to look at a phenomenon through a historical and conceptual point of view, and to understand it through the lived realities and the accumulated scientific knowledge.en
