dc.description.abstractO consumo pela sociedade de produtos de origem animal representa ingestão de fontes de nutrientes essenciais à saúde. Os produtos cárneos e lácteos produzidos pelos ruminantes a pasto são mais benéficos a saúde humana do que quando em confinamento. No Rio Grande do Sul, as pastagens naturais são o principal recurso forrageiro da pecuária de corte. Objetivou-se caracterizar o ambiente de produção de bovinos de corte puros Angus e suas cruzas com Nelore, modificado por práticas de intensificação do uso insumos, através da composição florística e perfil de ácidos graxos da vegetação e avaliar a qualidade da carne produzida. Cinqüenta e seis novilhos foram criados e terminados com 26-28 meses em pastagem natural (PN), pastagem natural adubada (PA) e pastagem natural adubada e sobressemeada com Lolium multiflorum (PM). Foram listadas as cinco principais espécies e cortadas as partes das plantas aparentemente consumidas pelos animais, que compunham os sítios de vegetação no período de deposição de gordura dos animais, que foi avaliada por ultrassonografia na 12-13ª costelas. O abate ocorreu quando o grupo racial de cada tratamento alimentar alcançou 3 a 6 mm de espessura de gordura subcutânea. As espécies mais representativas em termos de freqüência foram Lolium multiflorum, Andropogon lateralis, espécies de Cyperaceae e Juncaceae, Coelorachis selloana, Piptochaetium stipoides, Paspalum dilatatum, Paspalum notatum e Stipa setigera. As análises de agrupamento dos sítios de vegetação por participação de espécies e do perfil de ácidos graxos indicaram o número ideal de quatro grupos, respectivamente, com r2 de 37,9% e 78,8%. A composição química da carne foi similar entre Angus e suas cruzas com Nelore. Novilhos em PM apresentaram menor percentual de umidade e teor do ácido graxo C20:4n–6 na carne que em PN. A relação n-6:n-3 foi maior para novilhos alimentados em PN (3,66) do que para novilhos em PA (2,93) e PM (2,77). Não diferiram (P>0,05) os ácidos graxos saturados, os monoinsaturados e o ácido linoléico conjugado (CLA - C18:2cis–9 trans-11) entre os tratamentos alimentares. Novilhos cruzas apresentaram maiores teores dos ácidos graxos C15:1, C18:1n-9c, C20:3n-6, AGM, a relação AGM:AGS e a atividade da enzima Δ9-dessaturase no C18 e no CLA do que os novilhos Angus. Entretanto, os ácidos graxos saturados C18:0 e C20:0 foram mais elevados para Angus em relação a cruzas. O melhor perfil lipídico dos sítios se associou a presença de azevém na condição de PM, assim como ao estádio vegetativo que as espécies se encontravam. Especialmente em pastagem natural fertilizada e pastagem fertilizada com introdução de espécie hibernal, o cruzamento pode tornar a carne bovina mais favorável à saúde humana em relação à raça pura de origem Britânica.pt_BR
dc.description.abstractConsumption by the society of animal products represents the ingestion sources of nutrients essential to health. The meat and milk products produced by ruminants at pasture are more beneficial to human health than when in confinement. In Rio Grande do Sul, the natural pastures are the main forage resource of livestock. The objective of this study was to characterize the production environment of pure Angus beef cattle and their crosses with Nellore modified by fertilization and/or cultivated species introduction, through the floristic composition and fatty acid profile of the vegetation and to assess the quality of meat produced. Fifty-six calves were created and finished with 26-28 months on natural pasture (NP), fertilized natural pasture (FP) and natural pasture fertilized and oversown with Lolium multiflorum (OP). During the period of fat deposition of the experimental animals, the five more frequent forage species that composed foraging sites were sampled by simulating animal defoliation. Slaughter was done when subcutaneous fat thickness of the breed group of each feed treatment reached 3-6 mm, which was assessed by ultrasonography at 12-13 ribs. The most representative species in terms of frequency were Lolium multiflorum, Andropogon lateralis, species of Cyperaceae and Juncaceae, Coelorachis selloana, Piptochaetium stipoides, Paspalum dilatatum, Paspalum notatum and Stipa setigera. The cluster analysis of vegetation sites by species regroupment identified four groups, respectively, with r2 37.9% and 78,8%. The meat chemical composition were similar between Angus and their crossbred with Nellore. Meat from OP steers had lower rates of moisture and fatty acid C20:4n-6 than meat from steers in NP. The n-6:n-3 ratio were higher for steers feed in NP (3.66) than for steers in FP (2.93) and OP (2.77). Concentration of saturated fatty acids, monounsaturated and of conjugated linoleic acid (CLA - C18: 2cis-9 trans-11) did not differ (P>0.05) among feeding treatments. Crossbred showed higher levels of fatty acids C15:1, C18:1n-9c, C20:3n-6, MUFA, MUFA:SFA and Δ9-desaturase enzyme activity in the C18 and the CLA than Angus. However, the saturated fatty acid C18:0 and C20:0 were higher for Angus. The best lipid profile was associated with the presence of ryegrass on OP condition, and the vegetative stage of the others species present in the sites. Some interactions were significant (P<0.05), showing that especially in natural grassland modified by fertilization and/or species introduction, the use of crossings steers can produce meat more favorable to human health in relation to pure-bred British origin.en
